Homemade Whole Wheat Fluffy Sandwich Bread

Once I got married I realized that there were things that I could make from home that not only cost less, but taste so much better than store bought. I am always trying and testing out new bread recipes but so far this is definitely my favorite! This bread is perfect for toast, and is in my opinion best paired with butter and pumpkin butter! The result is a delicious, wholesome bread perfect for sandwiches.


Homemade Whole Wheat Fluffy Sandwich Bread


Ingredients:

- 2 1/4 teaspoons active dry yeast

- 1 cup warm water (about 110°F or 43°C)

- 2 tablespoons honey or maple syrup

- 3 cups freshly ground whole wheat flour (from wheat berries)

- 2 tablespoons olive oil or melted coconut oil

- 1 1/2 teaspoons salt


Instructions:


1. Activate the Yeast:

   - In a small bowl, combine the warm water and honey or maple syrup. Stir to dissolve.

   - Sprinkle the yeast over the mixture, give it a gentle stir, and let it sit for about 5-10 minutes until it becomes frothy and activated.

2. Prepare Freshly Ground Whole Wheat Flour:

   - Grind whole wheat berries in a grain mill or home grinder to make fresh whole wheat flour.

3. Mix the Dough:

   - In a large mixing bowl, combine the freshly ground whole wheat flour and salt.

   - Pour in the activated yeast mixture and olive oil. Stir to combine.

4. Knead the Dough:

   - Turn the dough out onto a floured surface and knead it for about 10-15 minutes, or until it's smooth and elastic. You can add more freshly ground whole wheat flour as needed to prevent sticking.

5. First Rise:

   - Place the dough in a lightly oiled bowl, cover it with a clean cloth or plastic wrap, and let it rise in a warm, draft-free place for about 1-1.5 hours or until it has doubled in size.

6. Shape the Loaf:

   - Once the dough has risen, punch it down and turn it out onto a floured surface.

   - Shape it into a loaf and place it into a greased 9x5-inch loaf pan.

7. Second Rise:

   - Cover the pan with the cloth or plastic wrap again and let the dough rise for another 30-45 minutes.

8. Preheat and Bake:

   - Preheat your oven to 350°F (175°C).

   - Bake the bread for about 30-35 minutes or until the top is golden brown and the bread sounds hollow when tapped on the bottom.

9. Cool and Enjoy:

   - Remove the bread from the pan and let it cool on a wire rack before slicing.

Now you have a fluffy, wholesome whole wheat sandwich bread, made even more special by freshly grinding your own whole wheat flour. Enjoy it with your favorite fillings for sandwiches or as a hearty slice of toast.
